Sauerkraut Salad

     Sauerkraut Salad

2 cans sauerkraut, drained
1 small onion, diced
1 c. celery, diced
1 small green pepper, diced
1 1/2 c. sugar
1/4 c. oil
1/2 c. vinegar
1 small jar pimentos, chopped

Place sauerkraut in colander; rinse with cold water. Drain well. Combine sauerkraut, onion, celery, pepper, and pimentos in large bowl; mix well. Combine sugar, oil, vinegar and 1/4 cup water; mix well. Pour over sauerkraut mixture. Toss well. Cover and refrigerate overnight. Drain off excess dressing. Serve.

  1. Yes, it is quick and easy to make. My daughter helps me cook all the time and it seems to help get her to eat new things!!
