Chili

1 lb. Hamburger
1 c. cold water
1/2 c. tomato ketchup
2 or 3 Tbsp. chili powder
1 tsp. salt
dash of red and black pepper
1 c. red beans
1 medium onion, diced

Combine in large pot; hamburger, water, ketchup, chili powder, salt, red and black pepper, beans and onion. Simmer 2 hours. Serve




asparagus Casserole

1 can asparagus (drained)
1 can peas (drained)
2 eggs (boiled and chopped)
1 can cream of mushroom soup
1/3 c. slivered almonds
1/2 c. shredded cheese

Mix asparagus, peas, eggs, and mushroom soup in 8x8 baking dish and bake for 25 min. at 350. Remove from oven, sprinkle with cheese and return to oven until cheese melts. Remove from oven, garnish with almonds and enjoy.


Butternut squash casserole

2 c. drained, mashed butternut squash
6 Tbsp. margarine
1 c. sugar
1 c. milk
3 eggs
1/2 tsp. ginger
1/2 tsp. coconut flavoring

Combine squash, margarine, sugar, milk, eggs, ginger, and coconut flavoring. Then place in greased casserole dish. Place casserole in pan of water. Bake in preheated 320 oven for about 45 minutes or until knife inserted in center comes out clean.


Cranberry sauce

1 lb. fresh cranberries
2 c. sugar
2 c. water

In sauce pan boil sugar and water for 5 minutes. Add cranberries and boil without stirring until all the skins pop, about 5 minutes. Remove from heat and cool in sauce pan.


Apple dumpling salad

1 small apple-peeled, cored, and chopped
10 broken wheat crackers
1/4 c. raisins
1/4 c. honey roasted nuts
1-2 pinches of brown sugar

In medium bowl, combine; apple, crackers, raisins, nuts, and brown sugar. Mix well. serve.



Pink cloud salad

1 pkg. 8 oz. cream cheese- softened
1 c. vanilla ice cream
2 c. Frozen Strawberries- thawed

In large bowl, beat cream cheese until fluffy; blend in ice cream; stir in strawberries. Pour into 9x5 inch loaf pan. Freeze. Let stand at room temperature for 10 minutes. Invert pan to unmold. Serve by cutting frozen salad into slices or squares. Serve


quick salad dressing

1 c. mayonnaise
2 Tbsp. sugar
1/2 c. milk

Mix mayo, sugar and milk together. Taste test for desired sweetness and consistency. Add more milk for thinner or less for thicker consistency. Good in a pinch!


Zucchini soup

2 strips bacon
4 c. coarsely grated zucchini
1 small onion, chopped
2 c. beef stock
1/2 tsp. sweet basil
1 small clove of garlic, crushed
2 tsp. chopped parsley
1/2 tsp salt
1/8 tsp pepper
1/2 tsp. seasoned salt

Fry bacon until crisp; drain. Combine zucchini, onion, beef stock, swet basil, garlic clove-crushed, parsley flakes, salt, pepper, and seasoned salt in kettle; cook until zucchini is soft. Place in blender container; process until smooth. Reheat.



egg salad

6 egg whites
1 or 2 tablespoons olive oil mayo
1 tsp. mustard
salt and pepper to taste
2 to 3 sliced pickles


Blend all these ingredients together in a bowl. Microwave for 1 to 2 minutes and serve


Corn chowder

1 can cream of potato soup
1 can cream corn
1 soup can of half and half
1 soup can of milk

Combine soup, cream corn, half and half cream, and milk. Stir until heated thoroughly.

Black bean soup

2 chicken cans (drained)
4 cans black beans
26 oz. jar of salsa (your choice)

In large sauce pan combine drained chicken, black beans, and salsa. Stir well. Bring to boil, reduce heat. Simmer for 20 minutes. Serve with shredded cheese.

Gelatin milk shake

1 c. milk
1 pkg. any flavor gelatin  (4 serving size)
1 pt. vanilla ice cream

In blender, add milk and gelatin and blend for 30 seconds. Add softened ice cream and blend for 1 minute. Enjoy


Artichoke dip

1 c. artichokes-drained, chopped
8 oz. parmesan cheese
8 oz. mayonnaise

Mix artichokes, cheese and mayo. Bake in oven @ 350 until light brown on top. Serve hot or cold, with crackers.


lemonade

1 c. sugar
1 c. water
1/2 c. lemon juice
4 c. water

Combine in sauce pan, sugar and 1 cup water. Boil for 1 minute to make syrup. Mix lemon juice, syrup, and 4 cups of water into pitcher. Pour over ice in tall glasses.


instant hot cocoa mix

1 (8 qt.) box instant nonfat dry milk
1 (2 lb.) can Nestles quik
1/2 (6 oz.) jar non-dairy coffee creamer
1 c. powdered sugar

Mix all ingredients together until well blended. Store in air tight container until ready to use. Place 1/4 cup cocoa mix in cup, fill with hot water; stir until cocoa mix is dissolved.


Banana shakes

1 c. half and half
4 c. vanilla ice cream, softened
1 medium banana, sliced
1/4 tsp. banana extract

In blender, combine all ingredients. Cover and process until smooth. Pour into chilled glasses.



protein fruit smoothie

1 scoop vanilla whey protein
1 c. skim milk
1 c. frozen or fresh fruit

Blend and serve





chili cheese dip

15 ounces can chili con carne
4 ounces can green chilies (chopped)
1 lb. velveeta cheese (cubed)
tortilla chips
Combine chili con carde, cubed cheese, and green chilies in a sauce pan fondue pot. Heat stirring frequently until the cheese melts. Serve warm with tortilla chips.

Steak and eggs

Strips of steak
eggs
salt and pepper to taste

Use some left over steak and cut it in strips. Saute it on a skillet for a few minutes to warm the steak back up. Crack two eggs in the skillet and slowly stir it up to make it scrambled eggs. Salt and pepper to taste and enjoy.

BBQ steak with rice and green beans

Steak

BBQ sauce

Cook the rice according to the package and amount you like. Cook the green beans according to the can. Put the steak on the grill with some bbq sauce on both sides. Cook for 10 to 20 minutes according to hoe well done you like it. Serve

shrimp alfredo










1 lb frozen shrimp
1 box pasta
1 can bertolli sauce
Dash of rosemary
Dash of garlic
Dash of thyme
Dash of basil
Dash of parsley
Dash of salt
1/4 cup of butter
1/8 cup olive oil
Cook the pasta of your choice according to the box. Heat up the oil and butter in a skillet on medium heat, add the shrimp. Cook it until done. Then add all the spices and bertolli sauce. Simmer on low for 7 to 8 minutes until warm. Serve the sauce over the pasta and enjoy.

grilled steak


Steak
1/8 cup olive oil
A dash of sage
Steak seasoning

Heat up the grill. Tenderize the steak with a meat tenderizer on both sides. Rub the olive oil over both sides of the steak. Put the seasoning on both sides of the steak. Grill it for 10 to 20 minutes on both sides depending on how well done you like your steak. Enjoy

Turkey breast

1 lb chicken breast4 medium potatoes
1 large onion
4 tablespoons extra virgin olive oil
salt and pepper to taste
1/4 cup stick butter
A dash of parsley

Preheat oven to 350. Cut the vegetables in thin slices and put in the bottom of the baking dish. Pour the oil over the vegetables and salt and pepper to taste. Cut back the turkey breast skin and put thin cut slices of butter under the skin  Put the turkey breast over the vegetables. Add parsley on top of the dish. Bake for 1 and 1/2 hours. Enjoy

boneless pork chops

4 to 6 boneless pork chops
1/2 cup parmesan cheese
1/4 cup melted butter
Bread crumbs



    Preheat oven to 350. Dip the pork in bread crumbs. Put them in a baking dish. Pour a little butter over each pork chop. Sprinkle a little parmesan on each chop. Bake in the oven for 30 min. Enjoy

Zucchini Salad

1 medium zucchini
1 large tomato
1 small onion
1/2 cup cheese, cubed
1/4 cup ham, cubed
1 cup salad dressing of your choice
Salt and pepper to taste

Wash,peel and dice zucchini, wash tomatoes and clean onion. Add salt, cheese, and meat. Toss with salad dressing. Serve

Tomatoe soup

15 lb. tomatoes
1 bunch celery
1 c. flour
1 c. sugar
2 sweet peppers
2 large onions
1/4 c. salt

Boil together the tomatoes, celery, sweet peppers and onions. Strain those ingredients. Let come to boil; add flour, sugar and salt. Bring to boil. Serve

Guacamole dip

1 to 4 small to medium avocado, cut up
1 to 4 small to medium tomato, cut up
1/2 to 2 small onion, chopped fine
2 to 2 Tbsp. lemon juice
1 to 2 tsp salt
1/4 to 1/2 tsp hot peeper sauce

Just before serving: in covered blender container, at low speed, blend all ingredients until smooth. If you use the first measurement from each item, this will make 1 3/4 cup of dip.

Kraut Casserole

1 qt. kraut
1 pt. tomatoes
1/2 cup onion
1/2 cup brown sugar
5 or 6 slices bacon

Mix in bowl, kraut, tomatoes, onion, and brown sugar. Place in a baking dish. Place bacon slices on top. Cook @ 375 for one hour. Serve

Fiesta corn

2 eggs
1 cup cornmeal
1 can cream style corn
1/4 cup milk
1/3 melted margarine
1/2 tsp. soda
1 tsp. salt
2 cup grated cheddar cheese
1 (4 oz.) can green chilies, chopped

Beat eggs lightly in mixing bowl; stir in cornmeal. Add corn, milk, margarine, soda, and salt; mix well. Pour 1/2 of the corn mixture into greased 6 cup casserole. Sprinkle with 1 cup cheese and chilies, add remaining corn mixture. Sprinkle with remaining 1 cup cheese. Bake in preheated 350 oven for bout 45 minutes or until set. Cut into wedges to serve.

Home made salsa

1 large can of whole tomatoes, undrained
1 large can of tomato sauce
1 tsp. cumin
1 tsp. oregano
Dash of salt to taste
2-6 jalapenos according to taste
Dash of garlic salt
Dash of white pepper

Blend the tomatoes, tomato sauce, cumin, oregano, salt, garlic salt, white pepper and jalapenos all together. Serve

Sauerkraut Salad

     Sauerkraut Salad

2 cans sauerkraut, drained
1 small onion, diced
1 c. celery, diced
1 small green pepper, diced
1 1/2 c. sugar
1/4 c. oil
1/2 c. vinegar
1 small jar pimentos, chopped

Place sauerkraut in colander; rinse with cold water. Drain well. Combine sauerkraut, onion, celery, pepper, and pimentos in large bowl; mix well. Combine sugar, oil, vinegar and 1/4 cup water; mix well. Pour over sauerkraut mixture. Toss well. Cover and refrigerate overnight. Drain off excess dressing. Serve.

Introduction of myself

   Hello, my name is Melissa. I am originally from the west coast and now live in the east coast. Defiantly a culture shock, very different here. Anyways I am going to do a cook book blog with some recipes that my family would make growing up and how us kids helped cook their food. Also I am going to add some recipes and pics of food me and my daughter cook together. It is for my social media class and I am very excited to give this a shot! I choose to do this cause I love to cook even when i was younger. I would like to share with everyone the different kinds of food we ate and still eat.
